Our hosts were so great that we forgot we were supposed to be rushing to eat breakfast. Z thinks hash browns are the greatest thing and M prefers their smoked bacon to our streaky bacon. I guess I will be chatting with our butcher again.
We had an Easter luncheon today at 1 pm and had hoped to arrive home by 12 pm to have enough time to get settled a bit and prepare a dish.
So if you have maybe 1 hour, what would you make? No fruit or veggies since the last time I could go to the store was Thursday night. Nothing frozen because there would not be enough time to thaw. No cupcake or pastries because they wouldn’t be fresh. Cheese plate?
My go-to dish, especially for Easter is deviled eggs. I had big plans for these eggs. I was going to dye the white part pink, blue, or yellow and have three types of eggs–traditional, bacon-blue cheese, and curry. There was definitely not time to do that. There was not even time to do my traditional deviled eggs.
Instead thanks to my Pinterest obsession, I made Bunny Bait. I only had two bags of plain popcorn, so I could not practice beforehand. Bunny Bait is simply plain popcorn (do let it cool a bit before picking out the kernels even if you are in a rush), pretzel sticks broken into smaller pieces, Easter-colored M&Ms (I used every packet that was in my Hershey’s Easter Mix bag), and white chocolate candy coating (I used a New Zealand brand). Simply melt the candy coating in the microwave and pour over the popcorn, pretzels, and M&Ms. The directions said to put on wax paper to cool after stirring, but I did the whole process in a roasting pan (wax paper would have been better since I ended up with some popcorn ball-size chunks). Then I chilled it in the freezer while we got ready.
Everyone loved it and people kept asking for the recipe. You cannot get the pastel M&Ms here, but really any color would work. I think green and red for Christmas would be perfect or even orange and brown for Halloween. Maybe I will do red and blue for the Fourth of July party I am thinking of hosting.
The kids did not do much hunting for eggs at the party. Z hit the bottom of a pipe while after grabbing an egg. I think the cut on his forehead will be fine without stitches, but he was done.
While the party was fun, I think I would have rather stayed up north for the day. Only J has to work tomorrow, so we could have come home really late. Besides no one brought ham or deviled eggs to the pot luck. My ‘aunts’ did make one devil egg with cayenne pepper in my honor at their lunch and I am now tagged as a deviled egg on Facebook.
